This vibrant and flavorful arugula pesto pasta is a delicious and easy-to-make dish.
Ingredients
Pasta - 12 ounces
Black pepper - To taste
Salt - To taste
Olive oil - 1/4 cup
Lemon juice - 2 tablespoons
Pine nuts - 1/4 cup
Parmesan cheese - 1/2 cup, grated
Garlic - 2 cloves
Arugula - 4 cups
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
In a food processor, combine the arugula, garlic, Parmesan cheese, pine nuts, lemon juice, olive oil, salt, and black pepper. Process until smooth and well combined.
In a large pan, heat a drizzle of olive oil over medium heat. Add the arugula pesto and cook for 2-3 minutes, stirring occasionally.
Add the cooked pasta to the pan and toss to coat the pasta evenly with the pesto sauce. Cook for an additional 2-3 minutes, or until heated through.
Serve the arugula pesto pasta hot, garnished with extra Parmesan cheese and a sprinkle of black pepper.
