Arugula, Roasted Red Pepper and Feta Salad

Ingredients

  • Salt and pepper - to taste
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Feta cheese - 1/2 cup
  • Roasted red peppers - 2
  • Arugula - 4 cups

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut roasted red peppers into thin strips.
  3. In a large bowl, combine arugula, roasted red peppers, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
