Arugula, Grilled Salmon and Avocado Salad

A delicious and healthy salad with grilled salmon, arugula, and avocado.

Ingredients

  • Pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Avocado - 2
  • Salmon - 1 lb
  • Arugula - 4 cups

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the salmon with olive oil and season with salt and pepper.
  3. Grill the salmon for about 3 minutes per side, or until cooked through.
  4. In a large bowl, combine the arugula, avocado, olive oil, lemon juice, salt, and pepper.
  5. Toss to combine.
  6. Divide the salad among 4 plates and top with the grilled salmon.
