Arugula, Grilled Peach and Burrata Salad

A delicious summer salad combining sweet grilled peaches, creamy burrata, and peppery arugula.

Ingredients

  • Pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Balsamic vinegar - 2 tablespoons
  • Extra virgin olive oil - 2 tablespoons
  • Burrata - 1 ball
  • Grilled peaches - 2 peaches, halved and grilled
  • Arugula - 4 cups

Instructions

  1. Preheat the grill to medium-high heat.
  2. Halve the peaches and brush with olive oil.
  3. Grill the peaches for 4-5 minutes, flipping once, until they are lightly charred.
  4. In a large bowl, combine the arugula, grilled peaches, and burrata.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and gently toss to combine.
  7. Serve immediately.
