Apricot Crumble Tart

This delicious apricot crumble tart combines the sweetness of ripe apricots with a buttery crumble topping.

Ingredients

  • Pie crust - 1, store-bought or homemade
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Butter - 1/2 cup, cold and cubed
  • All - purpose flour - 1 cup
  • Granulated sugar - 1/2 cup
  • Apricots - 6 cups, pitted and halved

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the apricots, granulated sugar, flour, cinnamon, salt, vanilla extract, and lemon juice. Toss until the apricots are evenly coated.
  3. Roll out the pie crust and place it in a tart pan. Trim any excess crust.
  4. Pour the apricot mixture into the tart crust, spreading it out evenly.
  5. In a separate bowl, combine the flour, brown sugar, and cold cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  6. Sprinkle the crumble mixture over the apricots in the tart pan.
  7. Bake for 35-40 minutes, or until the crust is golden brown and the apricots are tender.
  8. Allow the tart to cool for a few minutes before serving. Serve warm or at room temperature.
  9. Optional: Serve with a scoop of vanilla ice cream or a dollop of whipped cream.
