Apricot Crumble Ravioli

These delicious apricot-filled ravioli are topped with a sweet crumble topping for a delightful dessert.

Ingredients

  • Powdered sugar - For dusting
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Butter - 1/2 cup, cold and diced
  • Brown sugar - 1/2 cup
  • All - purpose flour - 2 cups
  • Cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/4 cup
  • Apricots - 1 cup, diced

Instructions

  1. In a bowl, combine the diced apricots, sugar, lemon juice, and cinnamon. Mix well and set aside.
  2. In a separate bowl, combine the all-purpose flour, brown sugar, diced cold butter, vanilla extract, and salt. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  3. On a lightly floured surface, roll out the ravioli dough into thin sheets.
  4. Place spoonfuls of the apricot mixture onto one sheet of dough, leaving space between each spoonful.
  5. Cover with another sheet of dough and press down gently to seal the edges.
  6. Use a ravioli cutter or a sharp knife to cut out individual ravioli.
  7. Bring a pot of water to a boil and cook the ravioli for about 3-4 minutes, or until they float to the surface.
  8. Remove the cooked ravioli from the water and let them cool slightly.
  9. Preheat the oven to 350°F.
  10. Place the cooked ravioli on a baking sheet and sprinkle the crumble topping over each ravioli.
  11. Bake for 15-20 minutes, or until the crumble topping is golden brown.
  12. Remove from the oven and let cool for a few minutes.
  13. Dust with powdered sugar before serving.
