Apricot Crumble Lasagna

This delicious apricot crumble lasagna is a unique twist on the classic Italian dessert. Layers of apricot filling, creamy mascarpone cheese, and crunchy crumble topping make for a delightful dessert.

Ingredients

  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/2 cup
  • Butter - 1/2 cup, melted
  • Graham crackers - 12 sheets
  • Vanilla extract - 1 teaspoon
  • Heavy cream - 1/2 cup
  • Mascarpone cheese - 8 ounces
  • Cornstarch - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/2 cup
  • Apricots - 2 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the sliced apricots, sugar, lemon juice, and cornstarch. Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and set aside.
  3. In a mixing bowl, beat the mascarpone cheese, heavy cream, and vanilla extract until smooth and creamy.
  4. In a separate bowl, combine the crushed graham crackers, melted butter, brown sugar, and cinnamon. Mix well to form the crumble topping.
  5. To assemble the lasagna, spread a thin layer of the apricot filling on the bottom of a baking dish.
  6. Place a layer of graham crackers on top of the apricot filling.
  7. Spread a layer of the mascarpone mixture over the graham crackers.
  8. Repeat the layers until all the ingredients are used, ending with a layer of the crumble topping.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
  10. Remove from the oven and let it cool for a few minutes before serving.
  11. Serve warm or chilled, and enjoy!
