Ingredients

  • Crumble topping - 1 cup
  • Vanilla extract - 1 teaspoon
  • Whole milk - 1 cup
  • Heavy cream - 1 cup
  • Lemon juice - 1 tablespoon
  • Sugar - 1/2 cup
  • Apricots - 1 pound, pitted and chopped

Instructions

  1. In a blender or food processor, puree the apricots, sugar, and lemon juice until smooth.
  2. In a mixing bowl, combine the apricot puree, heavy cream, whole milk, and vanilla extract. Stir well.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  4. While the ice cream is churning, prepare the crumble topping by combining the crumble topping ingredients in a separate bowl.
  5. Once the ice cream reaches a soft-serve consistency, transfer it to a freezer-safe container and sprinkle the crumble topping over the top.
  6. Cover the container and freeze for at least 4 hours, or until firm.
  7. Serve the apricot crumble ice cream in bowls or cones and enjoy!
