Apricot Crumble Burritos

These delicious apricot crumble burritos are a sweet and satisfying dessert. The warm apricot filling is wrapped in a crispy tortilla and topped with a crunchy crumble topping.

Ingredients

  • Vanilla ice cream (for serving) - Optional
  • Chopped nuts (optional) - 1/4 cup
  • Rolled oats - 1/2 cup
  • Brown sugar - 1/2 cup
  • Butter - 4 tablespoons, melted
  • Flour tortillas - 6
  • Cinnamon - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1/2 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the sliced apricots, sugar, cornstarch, and cinnamon. Mix well to coat the apricots.
  3. Place a spoonful of the apricot mixture onto each flour tortilla and fold into a burrito shape.
  4. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped nuts (if using). Mix until crumbly.
  5. Place the filled tortillas onto a baking sheet and sprinkle the crumble mixture over the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the tortillas are crispy and the apricot filling is bubbly.
  7. Remove from the oven and let cool for a few minutes.
  8. Serve the apricot crumble burritos warm, optionally topped with a scoop of vanilla ice cream.
