Ingredients

  • Whipped cream or ice cream - For serving
  • Vanilla extract - 1 teaspoon
  • Rolled oats - 1 cup
  • Brown sugar - 1/2 cup
  • Butter - 4 tablespoons, melted
  • Flour tortillas - 6
  • Cinnamon - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1/2 cup
  • Apricots - 4 cups, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the sliced apricots, sugar, cornstarch, and cinnamon. Mix well to coat the apricots.
  3. Place a spoonful of the apricot mixture onto each flour tortilla and roll it up like a burrito.
  4. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and vanilla extract. Mix until crumbly.
  5. Place the rolled apricot burritos in a baking dish and sprinkle the oat mixture on top.
