Apricot Crisp Granola

This homemade apricot crisp granola is a delicious and healthy breakfast option. It is made with rolled oats, dried apricots, nuts, and a touch of sweetness.

Ingredients

  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Coconut oil - 2 tablespoons
  • Honey - 1/4 cup
  • Pecans - 1/2 cup, chopped
  • Almonds - 1/2 cup, chopped
  • Dried apricots - 1 cup, chopped
  • Rolled oats - 3 cups

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, dried apricots, almonds, pecans, cinnamon, and salt.
  3. In a small saucepan, melt the coconut oil over low heat. Stir in the honey and vanilla extract until well combined.
  4. Pour the coconut oil mixture over the oat mixture and stir until all the ingredients are evenly coated.
  5. Spread the granola mixture onto the prepared baking sheet in an even layer.
  6. Bake for 20-25 minutes, or until the granola is golden brown and crispy, stirring once halfway through.
  7. Remove from the oven and let the granola cool completely on the baking sheet.
  8. Once cooled, transfer the granola to an airtight container for storage.
