Apricot Crisp Custard

This delicious apricot crisp custard combines the sweetness of ripe apricots with a creamy custard filling and a crispy oat topping.

Ingredients

  • Vanilla extract - 1 teaspoon
  • Milk - 1 cup
  • Egg - 1
  • Brown sugar - 1/4 cup
  • Old - fashioned oats - 1/2 cup
  • Unsalted butter - 4 tablespoons, cold and cubed
  • Salt - 1/4 teaspoon
  • Ground cinnamon - 1 teaspoon
  • All - purpose flour - 1/4 cup
  • Granulated sugar - 1/2 cup
  • Apricots - 6 ripe, pitted and sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the sliced apricots, granulated sugar, flour, cinnamon, and salt. Mix well to coat the apricots.
  3. In a separate bowl, combine the cold cubed butter, oats, and brown sugar. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. In a small saucepan, heat the milk over medium heat until it starts to steam. In a separate bowl, whisk together the egg and vanilla extract. Slowly pour the hot milk into the egg mixture, whisking constantly.
  5. Place the coated apricots in a greased baking dish. Pour the custard mixture over the apricots.
  6. Sprinkle the oat topping evenly over the custard and apricots.
  7. Bake in the preheated oven for 35-40 minutes, or until the custard is set and the topping is golden brown.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Serve warm and enjoy!
