Apricot Crumble Bread

This delicious apricot crumble bread is a perfect combination of sweet apricots and a crunchy crumble topping.

Ingredients

  • Unsalted butter - 2 tablespoons, melted
  • Ground cinnamon - 1 teaspoon
  • Rolled oats - 1/2 cup
  • Brown sugar - 1/2 cup
  • Dried apricots - 1 cup, chopped
  • Vanilla extract - 1 teaspoon
  • Milk - 1/2 cup
  • Egg - 1
  • Granulated sugar - 3/4 cup
  • Unsalted butter - 1/2 cup, softened
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, milk, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped dried apricots.
  7. In a small bowl, combine the brown sugar, rolled oats, ground cinnamon, and melted butter to make the crumble topping.
  8. Pour half of the bread batter into the greased loaf pan. Sprinkle half of the crumble topping over the batter.
  9. Pour the remaining batter over the crumble topping, and sprinkle the remaining crumble topping on top.
  10. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
