Apricot Cobbler Pie

This delicious apricot cobbler pie combines the sweetness of ripe apricots with a buttery cobbler topping.

Ingredients

  • Vanilla ice cream - For serving
  • Ground cinnamon - 1/2 teaspoon
  • All - purpose flour - 1/2 cup
  • Old - fashioned oats - 1/2 cup
  • Brown sugar - 1/2 cup
  • Unsalted butter - 1/2 cup, cold and cubed
  • Salt - 1/4 teaspoon
  • Cinnamon - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • All - purpose flour - 1/4 cup
  • Granulated sugar - 1 cup
  • Apricots - 6 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, flour, lemon juice, cinnamon, and salt. Toss until the apricots are well coated.
  3. Transfer the apricot mixture to a 9-inch pie dish.
  4. In a separate bowl, combine the cold cubed butter, brown sugar, oats, flour, and ground cinnamon. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  5. Sprinkle the crumb topping evenly over the apricot mixture.
  6. Bake for 40-45 minutes, or until the topping is golden brown and the apricots are bubbling.
  7. Remove from the oven and let cool for a few minutes.
  8. Serve warm with a scoop of vanilla ice cream on top.
