This delicious apricot crumble pie is made with fresh apricots and a buttery crumble topping.
Ingredients
Chopped almonds - 1/2 cup
Rolled oats - 1 cup
Brown sugar - 1/2 cup
Unsalted butter - 1/2 cup, cold and cubed
Salt - 1/4 teaspoon
Cinnamon - 1 teaspoon
All - purpose flour - 1/4 cup
Lemon juice - 1 tablespoon
Granulated sugar - 1/2 cup
Apricots - 6 cups, pitted and sliced
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, combine the sliced apricots, granulated sugar, lemon juice, flour, cinnamon, and salt. Toss until the apricots are coated evenly.
Transfer the apricot mixture to a 9-inch pie dish.
In a separate bowl, combine the cold cubed butter, brown sugar, rolled oats, and chopped almonds. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
Sprinkle the crumble topping evenly over the apricot mixture.
Bake for 40-45 minutes, or until the crumble topping is golden brown and the apricots are bubbling.
Remove from the oven and let cool for at least 15 minutes before serving.
Serve warm with a scoop of vanilla ice cream, if desired.
