Apricot Crumble Pie

This delicious apricot crumble pie is made with fresh apricots and a buttery crumble topping.

Ingredients

  • Chopped almonds - 1/2 cup
  • Rolled oats - 1 cup
  • Brown sugar - 1/2 cup
  • Unsalted butter - 1/2 cup, cold and cubed
  • Salt - 1/4 teaspoon
  • Cinnamon - 1 teaspoon
  • All - purpose flour - 1/4 cup
  • Lemon juice - 1 tablespoon
  • Granulated sugar - 1/2 cup
  • Apricots - 6 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, lemon juice, flour, cinnamon, and salt. Toss until the apricots are coated evenly.
  3. Transfer the apricot mixture to a 9-inch pie dish.
  4. In a separate bowl, combine the cold cubed butter, brown sugar, rolled oats, and chopped almonds. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  5. Sprinkle the crumble topping evenly over the apricot mixture.
  6. Bake for 40-45 minutes, or until the crumble topping is golden brown and the apricots are bubbling.
  7. Remove from the oven and let cool for at least 15 minutes before serving.
  8. Serve warm with a scoop of vanilla ice cream, if desired.
