Ingredients

  • Vanilla ice cream - For serving
  • Whipped cream - For serving
  • Cinnamon - 1 teaspoon
  • Brown sugar - 1/4 cup
  • Butter - 1/4 cup, melted
  • Flour tortilla chips - 1 bag
  • Cinnamon - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/2 cup
  • Apricots - 2 cups, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the sliced apricots, sugar, lemon juice, cornstarch, and cinnamon. Cook over medium heat until the mixture thickens, stirring occasionally. Remove from heat and set aside.
