Apricot Cobbler Burrito

This unique twist on a classic cobbler combines the flavors of apricot filling and a flaky burrito crust.

Ingredients

  • Vanilla ice cream - For serving
  • Brown sugar - 1/2 cup
  • Butter - 4 tablespoons, melted
  • Flour tortillas - 6 large
  • Cinnamon - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1 cup
  • Apricots - 4 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the sliced apricots, sugar, cornstarch, and cinnamon. Mix well to coat the apricots.
  3. Place a spoonful of the apricot mixture onto the center of each flour tortilla. Fold the sides of the tortilla over the filling and roll it up like a burrito.
  4. Place the burritos seam-side down in a baking dish.
  5. In a small bowl, mix together the melted butter and brown sugar. Brush the mixture over the tops of the burritos.
  6. Bake for 30-35 minutes, or until the burritos are golden brown and the filling is bubbly.
  7. Serve the apricot cobbler burritos warm, topped with a scoop of vanilla ice cream.
