  1. Preheat the oven to 150°C (300°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the ground almonds, icing sugar, egg whites, cinnamon, and lemon zest. Mix until a dough forms.
  3. On a surface dusted with icing sugar, roll out the dough to a thickness of about 1/4 inch.
  4. Using a star-shaped cookie cutter, cut out the cookies and place them on the prepared baking tray.
  5. Bake for 15 minutes, or until the edges are lightly golden.
  6. Allow the cookies to cool on the tray for a few minutes, then transfer them to a wire rack to cool completely.
