Xoi Nep Than
Xoi Nep Than is a traditional Vietnamese sticky rice dish made with black glutinous rice.
Ingredients - Serves 4
- Sliced mango - 1
- Shredded coconut - 1/4 cup
- Toasted sesame seeds - 2 tablespoons
- Salt - 1/2 teaspoon
- Sugar - 1/4 cup
- Coconut milk - 1 cup
- Water - 3 cups
- Black glutinous rice - 2 cups
Let's Get Started
- Rinse the black glutinous rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice and water. Let it soak for at least 4 hours or overnight.
- After soaking, drain the rice and transfer it back to the pot.
- Add the coconut milk, sugar, and salt to the pot with the rice.
- Stir well to combine, then bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low and cover the pot. Let it simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, toast the sesame seeds in a dry pan over medium heat until golden brown. Set aside.
- Once the rice is cooked, fluff it with a fork and let it rest for a few minutes.
- Serve the Xoi Nep Than hot, topped with toasted sesame seeds, shredded coconut, and sliced mango.
