Ingredients - Serves 2
- Nori seaweed - 2 sheets, cut into strips
- Green onions - 2, thinly sliced
- Sugar - 1 teaspoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Dashi stock - 4 cups
- Vegetable oil - For frying
- Assorted vegetables (e.g., sweet potato, broccoli, bell pepper) - 1 cup, sliced
- Ice-cold water - 1/2 cup
- Tempura batter mix - 1/2 cup
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a mixing bowl, combine the tempura batter mix and ice-cold water. Stir until just combined, leaving some lumps.
- Heat vegetable oil in a deep pan or pot for frying. Dip the assorted vegetables into the tempura batter, allowing any excess batter to drip off, and carefully place them in the hot oil. Fry until golden and crispy. Remove and drain on a paper towel.
- In a separate pot, bring the dashi stock to a boil. Reduce the heat and add soy sauce, mirin, and sugar. Simmer for a few minutes to allow the flavors to meld.
- Divide the cooked udon noodles into serving bowls. Pour the hot broth over the noodles.
- Top the udon with the crispy tempura vegetables.
- Garnish with sliced green onions and strips of nori seaweed.
- Serve hot and enjoy!
