Let's Get Started

  1. Wash and dry the fruit. Skewer the fruit onto the bamboo skewers.
  2. In a saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar is dissolved.
  3. Continue to cook the sugar syrup without stirring until it reaches 300°F (hard-crack stage) on a candy thermometer.
  4. Dip each skewer of fruit into the sugar syrup, coating the fruit completely. Allow any excess syrup to drip off.
  5. Place the coated fruit skewers onto a baking sheet lined with parchment paper to cool and harden.
  6. Once the sugar coating is hard, the tanghulu is ready to eat. Enjoy it the same day it's made for the best texture.
