Speculaas
Speculaas is a type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas' day in the Netherlands, Belgium, and around Christmas in Germany.
Ingredients - Serves 24
- Almond milk - 2 tablespoons
- Almond extract - 1 teaspoon
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Flour - 2 cups
- Speculaas spice mix - 3 tablespoons
- Brown sugar - 1 cup
- Butter - 1 cup, softened
Let's Get Started
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Mix in the speculaas spice mix and almond extract.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the almond milk, beginning and ending with the dry ingredients.
- Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the biscuits to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
