Speculaas is a type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas' day in the Netherlands, Belgium, and around Christmas in Germany.

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Mix in the speculaas spice mix and almond extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the almond milk, beginning and ending with the dry ingredients.
  6. Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until the edges are golden brown.
  8. Allow the biscuits to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
