Seafood Miso Ramen
This flavorful seafood miso ramen is made with a rich broth, fresh seafood, and topped with a variety of delicious toppings.
Ingredients - Serves 2
- Nori seaweed - 2 sheets, cut into strips
- Soft-boiled eggs - 2
- Bean sprouts - 1/2 cup
- Corn kernels - 1/2 cup
- Green onions - 2, thinly sliced
- Mussels - 8
- Scallops - 8 medium
- Shrimp - 8 large, peeled and deveined
- Ramen noodles - 2 servings
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Miso paste - 3 tablespoons
- Water - 4 cups
- Dried bonito flakes - 1 cup
- Dried kombu - 2 sheets
Let's Get Started
- In a large pot, add the dried kombu and dried bonito flakes to the water. Bring to a boil, then reduce the heat and simmer for 15 minutes to make the broth.
- Remove the kombu and bonito flakes from the broth and discard.
- In a small bowl, whisk together the miso paste, soy sauce, and mirin. Add the miso mixture to the broth and stir well to combine.
- Cook the ramen noodles according to the package instructions. Drain and set aside.
- In a separate pot, bring water to a boil and cook the shrimp, scallops, and mussels until cooked through. Drain and set aside.
- Divide the cooked ramen noodles between two bowls. Top with the seafood, green onions, corn kernels, bean sprouts, soft-boiled eggs, and nori seaweed.
- Pour the miso broth over the noodles and toppings.
- Serve hot and enjoy!
