Let's Get Started

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. In a food processor, combine the almond flour, powdered sugar, and graham cracker crumbs. Process until fine.
  3. In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Fold the dry ingredients into the egg whites until the mixture is smooth and shiny.
  5. Transfer the batter to a piping bag and pipe onto the prepared baking sheets. Let sit at room temperature for 30 minutes.
  6. Bake for 15 minutes, or until the macarons are set. Let cool completely.
  7. Spread a layer of marshmallow fluff onto half of the macarons.
  8. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour over the chopped chocolate and let sit for a minute, then stir until smooth.
  9. Spoon a small amount of ganache onto the other half of the macarons, then sandwich together with the marshmallow halves.
  10. Let the macarons sit for a few hours before serving to allow the flavors to meld together.
