S'mores Macarons
These S'mores Macarons combine the classic French macaron with the flavors of a favorite campfire treat. They feature a graham cracker macaron, marshmallow filling, and a chocolate ganache center.
Ingredients - Serves 24
- Heavy cream - 1/4 cup
- Semi-sweet chocolate - 1/2 cup, chopped
- Marshmallow fluff - 1 cup
- Granulated sugar - 1/4 cup
- Egg whites - 4 large
- Graham cracker crumbs - 1/4 cup
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour, powdered sugar, and graham cracker crumbs. Process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the dry ingredients into the egg whites until the mixture is smooth and shiny.
- Transfer the batter to a piping bag and pipe onto the prepared baking sheets. Let sit at room temperature for 30 minutes.
- Bake for 15 minutes, or until the macarons are set. Let cool completely.
- Spread a layer of marshmallow fluff onto half of the macarons.
- In a small saucepan, heat the heavy cream until it just begins to simmer. Pour over the chopped chocolate and let sit for a minute, then stir until smooth.
- Spoon a small amount of ganache onto the other half of the macarons, then sandwich together with the marshmallow halves.
- Let the macarons sit for a few hours before serving to allow the flavors to meld together.
