Rillettes
Pork rillettes are a delicious and rich spread made from slow-cooked pork and seasonings.
Ingredients - Serves 8
- Butter - 2 tablespoons
- Cognac - 2 tablespoons
- Bay leaves - 2
- Thyme - 1 teaspoon
- Garlic - 4 cloves, minced
- Black pepper - 1 teaspoon
- Salt - 2 teaspoons
- Pork shoulder - 2 pounds
Let's Get Started
- Preheat the oven to 300°F.
- Season the pork shoulder with salt and black pepper.
- In a large oven-safe pot, heat the butter over medium heat.
- Add the pork shoulder and cook until browned on all sides.
- Add the minced garlic, thyme, and bay leaves to the pot.
- Pour in the cognac and let it simmer for a minute.
- Cover the pot and transfer it to the preheated oven.
- Cook for about 4 hours, or until the pork is very tender and easily shreds.
- Remove the pot from the oven and let it cool slightly.
- Using two forks, shred the pork into small pieces.
- Transfer the shredded pork and any remaining juices to a bowl.
- Mix well to combine and adjust the seasoning if needed.
- Transfer the mixture to jars or ramekins, pressing it down lightly.
- Cover with plastic wrap and refrigerate for at least 2 hours, or until firm.
- Serve the pork rillettes chilled with crusty bread or crackers.
