  1. Preheat the oven to 300°F.
  2. Season the pork shoulder with salt and black pepper.
  3. In a large oven-safe pot, heat the butter over medium heat.
  4. Add the pork shoulder and cook until browned on all sides.
  5. Add the minced garlic, thyme, and bay leaves to the pot.
  6. Pour in the cognac and let it simmer for a minute.
  7. Cover the pot and transfer it to the preheated oven.
  8. Cook for about 4 hours, or until the pork is very tender and easily shreds.
  9. Remove the pot from the oven and let it cool slightly.
  10. Using two forks, shred the pork into small pieces.
  11. Transfer the shredded pork and any remaining juices to a bowl.
  12. Mix well to combine and adjust the seasoning if needed.
  13. Transfer the mixture to jars or ramekins, pressing it down lightly.
  14. Cover with plastic wrap and refrigerate for at least 2 hours, or until firm.
  15. Serve the pork rillettes chilled with crusty bread or crackers.
