Rhubarb and Sweet Potato Mash

Ingredients - Serves 4

Let's Get Started

  1. In a large pot, bring water to a boil and add the chopped rhubarb. Cook for 5 minutes or until tender. Drain and set aside.
  2. In the same pot, add the sweet potatoes and enough water to cover them. Bring to a boil and cook for 10-15 minutes or until the sweet potatoes are fork-tender. Drain.
  3. Return the cooked rhubarb to the pot and add the cooked sweet potatoes.
  4. Mash the mixture using a potato masher or fork until desired consistency is reached.
  5. Add butter, honey, cinnamon, salt, and black pepper. Stir well to combine.
  6. Taste and adjust seasoning if needed.
  7. Serve hot as a side dish with your favorite main course.
