Rhubarb and Sweet Potato Mash
This unique and flavorful mash combines the tartness of rhubarb with the sweetness of sweet potatoes.
Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Honey - 2 tablespoons
- Butter - 2 tablespoons
- Sweet potatoes - 2 large, peeled and cubed
- Rhubarb - 2 cups, chopped
Let's Get Started
- In a large pot, bring water to a boil and add the chopped rhubarb. Cook for 5 minutes or until tender. Drain and set aside.
- In the same pot, add the sweet potatoes and enough water to cover them. Bring to a boil and cook for 10-15 minutes or until the sweet potatoes are fork-tender. Drain.
- Return the cooked rhubarb to the pot and add the cooked sweet potatoes.
- Mash the mixture using a potato masher or fork until desired consistency is reached.
- Add butter, honey, cinnamon, salt, and black pepper. Stir well to combine.
- Taste and adjust seasoning if needed.
- Serve hot as a side dish with your favorite main course.
