Orange and Pistachio Biscotti
These crunchy and flavorful biscotti are infused with orange zest and studded with pistachios.
Ingredients - Serves 24
- Pistachios - 1/2 cup, chopped
- Orange zest - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 3/4 cup
- Unsalted butter - 1/2 cup, softened
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract and orange zest.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped pistachios.
- Divide the dough in half and shape each half into a log, about 12 inches long and 2 inches wide.
- Place the logs onto the prepared baking sheet, leaving space between them.
- Bake for 25-30 minutes, or until the logs are lightly golden and firm to the touch.
- Remove from the oven and let cool for 10 minutes.
- Reduce the oven temperature to 325°F (160°C).
- Using a serrated knife, slice the logs diagonally into 1/2-inch thick slices.
- Place the slices back onto the baking sheet, cut side down.
- Bake for an additional 10-15 minutes, or until the biscotti are crisp and golden.
- Remove from the oven and let cool completely before serving.
