Lemon Rice

Lemon Rice is a delicious South Indian dish you can easily put together when in a hurry. You can also make it with leftover rice. Serve Lemon Rice with a Raita (yogurt salad) and Poppadums for a simple yet tasty meal.

Ingredients - Serves 4

Let's Get Started

  1. Cook rice with 2 cups of water in a pan or rice cooker and let it cool.
  2. In a frying pan, heat oil and add mustard seeds.
  3. When the mustard seeds start to sputter, add the red chillies, asafoetida, curry leaves and peanuts. Fry until peanuts are golden brown.
  4. Lower the heat and add turmeric powder and cooked rice.
  5. Turn off the heat and add lemon juice and salt to taste. Mix well.
  6. Serve hot with a side of raita or enjoy it as is.
