Herb and Goat Cheese Soufflé

  1. Preheat the oven to 375°F and butter a soufflé dish. Sprinkle the dish with Parmesan cheese.
  2. In a large bowl, mix the goat cheese with the herbs.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes. Gradually whisk in the milk and cook until thickened, about 2 minutes. Remove from heat and stir in the goat cheese and herbs. Let cool slightly, then stir in the egg yolks one at a time.
  4. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Fold one third of the egg whites into the cheese mixture to lighten it, then fold in the remaining egg whites.
  5. Pour the mixture into the prepared dish and bake for 25 minutes, or until puffed and golden. Serve immediately.
