Herb and Goat Cheese Soufflé

- Salt and pepper - To taste
- Egg whites - 5
- Egg yolks - 4
- Milk - 1 cup
- All-purpose flour - 1 1/2 tablespoons
- Fresh herbs (such as parsley, thyme, and chives) - 1/4 cup, chopped
- Goat cheese - 4 ounces
- Parmesan cheese - 1/4 cup, grated
- Butter - 2 tablespoons
Let's Get Started
- Preheat the oven to 375°F and butter a soufflé dish. Sprinkle the dish with Parmesan cheese.
- In a large bowl, mix the goat cheese with the herbs.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes. Gradually whisk in the milk and cook until thickened, about 2 minutes. Remove from heat and stir in the goat cheese and herbs. Let cool slightly, then stir in the egg yolks one at a time.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Fold one third of the egg whites into the cheese mixture to lighten it, then fold in the remaining egg whites.
- Pour the mixture into the prepared dish and bake for 25 minutes, or until puffed and golden. Serve immediately.
