- Butter - 2 tablespoons
- Salt and pepper - To taste
- Milk - 2 tablespoons
- Eggs - 4
- Fresh oysters - 6, shucked
- Bacon - 4 slices

- Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, cook the oysters in the bacon fat until they are lightly browned, about 2 minutes on each side. Remove from the skillet and set aside.
- In a bowl, beat the eggs with the milk, salt, and pepper.
- In the same skillet, melt the butter over medium heat. Pour in the egg mixture and let it cook without stirring until it begins to set around the edges.
- Arrange the cooked bacon and oysters on top of the eggs. Fold the omelette in half and cook until the eggs are fully set, about 2 more minutes.
- Serve the Hangtown Fry hot, with toast or fried potatoes on the side if desired.
