Garlic Butter Roast Chicken

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix together the softened butter, minced garlic, lemon zest, lemon juice, chopped thyme, salt, and pepper.
  3. Pat the chicken dry with paper towels. Rub the garlic butter mixture all over the chicken, under the skin, and inside the cavity.
  4. Place the chicken in a roasting pan. Arrange the quartered potatoes and carrot chunks around the chicken.
  5. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Let the chicken rest for 10 minutes before carving. Serve the chicken with the roasted vegetables.
