Let's Get Started

  1. In a mixing bowl, whisk together the buckwheat flour, eggs, milk, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.
  3. Pour 1/4 cup of the batter into the skillet and swirl it around to form a thin crepe.
  4. Cook for 2-3 minutes, or until the edges start to brown. Flip the crepe and cook for another 1-2 minutes.
  5. Transfer the cooked crepe to a plate and repeat with the remaining batter.
  6. Place a slice of ham and a sprinkle of grated Gruyere cheese on one half of each crepe.
  7. Fold the other half of the crepe over the filling to form a half-moon shape.
  8. In the same skillet, melt the remaining tablespoon of butter over medium heat.
  9. Carefully crack an egg into the skillet and cook until the whites are set but the yolk is still runny.
  10. Place the cooked egg on top of the filled crepe.
  11. Repeat with the remaining egg and crepes.
  12. Serve the Galette Complète warm and enjoy!
