Florentine Crepes

Ingredients - Serves 4

Let's Get Started

  1. In a blender, combine the flour, eggs, milk, and melted butter. Blend until smooth and let rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the crepe batter into the skillet and tilt to evenly coat the bottom. Cook until the crepe is lightly browned on the bottom, flip and cook the other side. Repeat with the remaining batter.
  3. Preheat the oven to 350°F.
  4. In a bowl, combine the spinach, ricotta, Parmesan, nutmeg, salt, and pepper.
  5. Spoon some of the filling onto each crepe and roll up. Place the filled crepes in a baking dish.
  6. Bake for 10 minutes, or until heated through. Serve warm.
