Fedtebrød
Fedtebrød is a traditional Danish pastry made with a buttery cookie base and topped with a rich coconut caramel glaze.
Ingredients - Serves 12
- Unsweetened shredded coconut - 2 cups
- Sweetened condensed milk - 1 can (14 oz)
- Vanilla extract - 1 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Egg yolks - 2
- Granulated sugar - 1/2 cup
- Butter - 1 cup, softened
Let's Get Started
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg yolks one at a time, mixing well after each addition.
- In a separate bowl, whisk together the all-purpose flour and baking powder.
- Gradually add the flour mixture to the butter mixture, mixing until well combined.
- Stir in the vanilla extract.
- Take small portions of the dough and roll them into balls, then flatten them slightly with your palm.
- Place the flattened dough balls onto the prepared baking sheet, leaving some space between each cookie.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- While the cookies are baking, prepare the coconut caramel glaze. In a saucepan, heat the sweetened condensed milk over medium heat until it starts to thicken and turn golden brown.
- Remove the saucepan from heat and stir in the shredded coconut.
- Once the cookies are done baking, remove them from the oven and let them cool for a few minutes.
- Spread a generous amount of the coconut caramel glaze onto each cookie.
- Allow the glaze to set before serving. Enjoy!
