  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg yolks one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the all-purpose flour and baking powder.
  5. Gradually add the flour mixture to the butter mixture, mixing until well combined.
  6. Stir in the vanilla extract.
  7. Take small portions of the dough and roll them into balls, then flatten them slightly with your palm.
  8. Place the flattened dough balls onto the prepared baking sheet, leaving some space between each cookie.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  10. While the cookies are baking, prepare the coconut caramel glaze. In a saucepan, heat the sweetened condensed milk over medium heat until it starts to thicken and turn golden brown.
  11. Remove the saucepan from heat and stir in the shredded coconut.
  12. Once the cookies are done baking, remove them from the oven and let them cool for a few minutes.
  13. Spread a generous amount of the coconut caramel glaze onto each cookie.
  14. Allow the glaze to set before serving. Enjoy!
