Dongdongju
Dongdongju is a traditional Korean rice wine that is milky and slightly sweet. It is made with fermented rice and has a smooth and refreshing taste.
Ingredients - Serves 4
- Water - 4 cups
- Nuruk (fermentation starter) - 1/4 cup
- Short-grain rice - 2 cups
Let's Get Started
- Wash the rice thoroughly and soak it in water for 6 hours.
- Drain the soaked rice and transfer it to a large pot.
- Add water to the pot and bring it to a boil over high heat.
- Reduce the heat to low and simmer the rice for 30 minutes, or until it becomes soft and sticky.
- Remove the pot from the heat and let it cool to room temperature.
- Add nuruk to the cooled rice and mix well.
- Cover the pot with a clean cloth or plastic wrap and let it ferment at room temperature for 24 hours.
- After 24 hours, strain the fermented rice mixture through a cheesecloth or fine mesh strainer to remove any solids.
- Transfer the strained liquid into airtight bottles or jars and refrigerate for at least 2 hours before serving.
- Serve the dongdongju chilled and enjoy!
