Ingredients - Serves 4

Let's Get Started

  1. Wash the rice thoroughly and soak it in water for 6 hours.
  2. Drain the soaked rice and transfer it to a large pot.
  3. Add water to the pot and bring it to a boil over high heat.
  4. Reduce the heat to low and simmer the rice for 30 minutes, or until it becomes soft and sticky.
  5. Remove the pot from the heat and let it cool to room temperature.
  6. Add nuruk to the cooled rice and mix well.
  7. Cover the pot with a clean cloth or plastic wrap and let it ferment at room temperature for 24 hours.
  8. After 24 hours, strain the fermented rice mixture through a cheesecloth or fine mesh strainer to remove any solids.
  9. Transfer the strained liquid into airtight bottles or jars and refrigerate for at least 2 hours before serving.
  10. Serve the dongdongju chilled and enjoy!
