Let's Get Started

  1. In a large skillet, heat some oil over medium heat.
  2. Add the chicken breast and cook until browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the onion and carrot. Cook until softened.
  5. Add the cooked chicken back to the skillet.
  6. In a small bowl, mix together soy sauce, mirin, and sugar. Pour the sauce over the chicken and vegetables. Cook for a few minutes until the sauce thickens.
  7. In a separate pan, fry the eggs sunny-side up.
  8. To serve, divide the cooked rice into bowls. Top with the chicken and vegetable mixture. Place a fried egg on top of each bowl.
  9. Garnish with chopped green onions and nori seaweed strips.
