Châteaubriand
Châteaubriand is a classic French dish, a luxurious cut of beef tenderloin slow-roasted to perfection and served with a rich béarnaise sauce.
Ingredients - Serves 2
- Unsalted butter - 200 grams, melted
- Egg yolks - 3
- Tarragon - 1 tablespoon, chopped
- White wine vinegar - 2 tablespoons
- Shallots - 2, finely chopped
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Beef tenderloin - 500 grams
Let's Get Started
- Preheat the oven to 200°C (392°F).
- Season the beef with salt and pepper, then heat the butter in a frying pan and sear the beef on all sides.
- Transfer the beef to the oven and roast for 15-20 minutes for medium-rare.
- While the beef is roasting, make the béarnaise sauce. Combine the shallots, vinegar, and half the tarragon in a small saucepan. Simmer until the vinegar has evaporated.
- Transfer the shallot mixture to a heatproof bowl and add the egg yolks. Set the bowl over a pan of simmering water and whisk until pale and thick.
- Gradually add the melted butter, whisking constantly until the sauce is thick and creamy. Stir in the remaining tarragon and season with salt and pepper.
- Remove the beef from the oven and let it rest for 10 minutes before slicing.
- Serve the Châteaubriand with the béarnaise sauce.
