Chicken and Dumplings
A comforting and hearty dish, chicken and dumplings is a classic Southern recipe that features a thick chicken stew with fluffy dumplings.
Ingredients - Serves 6
- Milk - 1 cup
- Baking powder - 1 tablespoon
- All-purpose flour - 2 cups
- Butter - 2 tablespoons
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onion - 1, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 8 cups
- Chicken - 1 whole, cut into pieces
Let's Get Started
- Place the chicken, water, salt, and pepper in a large pot and bring to a boil. Reduce heat and simmer until the chicken is cooked through, about 1 hour.
- Remove the chicken from the pot and set aside to cool. Once cool, remove the meat from the bones and shred.
- In the same pot, add the onion, carrots, and celery and cook until soft, about 10 minutes.
- In a separate bowl, combine the flour and baking powder. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk to form a dough.
- Drop spoonfuls of the dough into the pot. Cover and simmer until the dumplings are cooked through, about 15 minutes.
- Return the shredded chicken to the pot and stir to combine. Cook for an additional 10 minutes, or until heated through.
