Chicken and Asparagus Lemon Stir Fry
A light and healthy stir-fry dish made with tender chicken, fresh asparagus, and a tangy lemon sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Cornstarch - 1 tablespoon
- Soy sauce - 2 tablespoons
- Lemon - 1, juiced and zested
- Asparagus - 1 bunch, trimmed and cut into 1-inch pieces
- Boneless, skinless chicken breasts - 1 pound, cut into thin strips
Let's Get Started
- In a small bowl, whisk together the lemon juice, soy sauce, and cornstarch. Set aside.
- Heat 1 tablespoon of the oil in a large skillet or wok over medium-high heat.
- Add the chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining oil, garlic, and ginger. Cook for 1 minute, or until fragrant.
- Add the asparagus and cook until tender, about 4-5 minutes.
- Return the chicken to the skillet and pour over the lemon sauce. Stir well to coat.
- Cook for an additional 2-3 minutes, or until the sauce has thickened.
- Serve the stir-fry hot, garnished with the lemon zest.
