Chicken and Asparagus Lemon Stir Fry

Let's Get Started

  1. In a small bowl, whisk together the lemon juice, soy sauce, and cornstarch. Set aside.
  2. Heat 1 tablespoon of the oil in a large skillet or wok over medium-high heat.
  3. Add the chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining oil, garlic, and ginger. Cook for 1 minute, or until fragrant.
  5. Add the asparagus and cook until tender, about 4-5 minutes.
  6. Return the chicken to the skillet and pour over the lemon sauce. Stir well to coat.
  7. Cook for an additional 2-3 minutes, or until the sauce has thickened.
  8. Serve the stir-fry hot, garnished with the lemon zest.
