Calissons are a traditional French candy consisting of a smooth, pale yellow, homogeneous paste of candied fruit and ground almonds topped with a thin layer of royal icing.

Let's Get Started

  1. Blend the candied melon in a food processor until smooth.
  2. Add the ground almonds and icing sugar and blend until well combined.
  3. Add the orange flower water and almond extract and blend until the mixture forms a smooth paste.
  4. Roll out the paste between two sheets of parchment paper to a thickness of about 1 cm.
  5. Cut out shapes using a calisson cutter or a small cookie cutter.
  6. Preheat the oven to 120°C (250°F).
  7. Whisk the egg white until frothy, then gradually add the granulated sugar, whisking until the mixture forms stiff peaks.
  8. Spread a thin layer of the egg white mixture over the top of each calisson.
  9. Bake for 15 minutes, or until the icing is set and slightly golden.
  10. Allow the calissons to cool completely before serving.
