Calissons
Calissons are a traditional French candy consisting of a smooth, pale yellow, homogeneous paste of candied fruit and ground almonds topped with a thin layer of royal icing.
Ingredients - Serves 30
- Granulated sugar - 30 grams
- Egg white - 1
- Almond extract - 1 teaspoon
- Orange flower water - 1 tablespoon
- Icing sugar - 200 grams
- Ground almonds - 200 grams
- Candied melon - 200 grams
Let's Get Started
- Blend the candied melon in a food processor until smooth.
- Add the ground almonds and icing sugar and blend until well combined.
- Add the orange flower water and almond extract and blend until the mixture forms a smooth paste.
- Roll out the paste between two sheets of parchment paper to a thickness of about 1 cm.
- Cut out shapes using a calisson cutter or a small cookie cutter.
- Preheat the oven to 120°C (250°F).
- Whisk the egg white until frothy, then gradually add the granulated sugar, whisking until the mixture forms stiff peaks.
- Spread a thin layer of the egg white mixture over the top of each calisson.
- Bake for 15 minutes, or until the icing is set and slightly golden.
- Allow the calissons to cool completely before serving.
