Calisson D'aix
Calisson d'Aix is a traditional French candy consisting of a smooth, pale yellow, homogeneous paste of candied fruit and ground almonds topped with a thin layer of royal icing.
Ingredients - Serves 30
- Wafer paper - 1 sheet
- Egg white - 1
- Almond extract - 1 teaspoon
- Orange flower water - 2 tablespoons
- Icing sugar - 200 grams
- Ground almonds - 200 grams
- Candied melon - 200 grams
Let's Get Started
- In a food processor, blend the candied melon until smooth.
- Add the ground almonds and icing sugar and blend until well combined.
- Add the orange flower water and almond extract and blend until the mixture forms a smooth paste.
- Roll out the wafer paper on a flat surface and spread the paste evenly over it.
- In a separate bowl, beat the egg white until frothy and spread it over the paste.
- Let the mixture dry for at least 2 hours, then cut into diamond shapes.
- Bake at 300°F for 15 minutes, or until the edges are lightly golden.
- Let the calissons cool completely before serving.
