  1. In a food processor, blend the candied melon until smooth.
  2. Add the ground almonds and icing sugar and blend until well combined.
  3. Add the orange flower water and almond extract and blend until the mixture forms a smooth paste.
  4. Roll out the wafer paper on a flat surface and spread the paste evenly over it.
  5. In a separate bowl, beat the egg white until frothy and spread it over the paste.
  6. Let the mixture dry for at least 2 hours, then cut into diamond shapes.
  7. Bake at 300°F for 15 minutes, or until the edges are lightly golden.
  8. Let the calissons cool completely before serving.
