Cajun Spiced Tempeh Po' Boy
This vegan take on the classic Po' Boy sandwich is packed with flavor from the Cajun spiced tempeh and tangy remoulade sauce.
Ingredients - Serves 4
- Hot sauce - 1 teaspoon
- Lemon juice - 1 tablespoon
- Capers - 1 tablespoon
- Dijon mustard - 1 tablespoon
- Pickle relish - 2 tablespoons
- Vegan mayonnaise - 1/2 cup
- Tomato - 1, sliced
- Lettuce - 4 leaves
- French bread - 1 loaf, cut into 4 pieces
- Olive oil - 2 tablespoons
- Cajun seasoning - 2 tablespoons
- Tempeh - 8 ounces
Let's Get Started
- Slice the tempeh into thin strips and coat with the Cajun seasoning.
- Heat the olive oil in a skillet over medium heat. Add the tempeh and cook until browned on both sides, about 5 minutes per side.
- While the tempeh is cooking, prepare the remoulade sauce by combining the vegan mayonnaise, pickle relish, Dijon mustard, capers, lemon juice, and hot sauce in a bowl. Stir until well combined.
- To assemble the sandwiches, spread a generous amount of remoulade sauce on each piece of bread. Top with lettuce, tomato, and the cooked tempeh.
- Serve the Po' Boys immediately, with extra remoulade sauce on the side for dipping.
