Bomboloni
Bomboloni are Italian filled doughnuts and are eaten as a snack food and dessert. They are small, bite-sized and are usually filled with fruit jam, chocolate, or custard cream.
Ingredients - Serves 12
- Vegetable oil - For frying
- Jam or custard cream - 1 cup
- Salt - 1/2 teaspoon
- All-purpose flour - 4 cups
- Vanilla extract - 1 teaspoon
- Butter - 3 tablespoons, melted
- Eggs - 2
- Active dry yeast - 1 tablespoon
- Sugar - 1/2 cup
- Milk - 1 cup
Let's Get Started
- Warm the milk and add the sugar and yeast. Let it sit for 5 minutes until the yeast is activated.
- In a large bowl, mix the eggs, melted butter, and vanilla extract. Add the yeast mixture.
- Gradually add the flour and salt, mixing until the dough comes together.
- Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic.
- Place the dough in a greased bowl, cover it with a towel and let it rise for about 2 hours, or until it doubles in size.
- Roll out the dough on a floured surface and cut out circles using a doughnut cutter or a glass.
- Cover the doughnuts with a towel and let them rise for another 30 minutes.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Fry the doughnuts until they're golden brown, about 2 minutes on each side.
- Drain the doughnuts on paper towels and let them cool.
- Fill a pastry bag with the jam or custard cream and pipe it into the center of each doughnut.
- Dust the bomboloni with powdered sugar before serving.
