Apricot Crisp Stir Fry
This delicious stir fry combines the sweetness of apricots with savory vegetables and a crispy topping.
Ingredients - Serves 4
- Crispy topping - 1 cup
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Honey - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Snap peas - 1 cup
- Red onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Apricots - 8, pitted and sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, honey, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger, and sauté for 1 minute until fragrant.
- Add bell peppers, red onion, and snap peas. Stir fry for 3-4 minutes until vegetables are crisp-tender.
- Push the vegetables to one side of the skillet and add the apricots. Cook for 2 minutes until slightly softened.
- Pour the soy sauce mixture over the vegetables and apricots. Stir well to coat everything evenly.
- Cook for an additional 2 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle the crispy topping over the stir fry.
