Apricot Crisp Stir Fry

  1. In a small bowl, whisk together soy sauce, honey, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger, and sauté for 1 minute until fragrant.
  4. Add bell peppers, red onion, and snap peas. Stir fry for 3-4 minutes until vegetables are crisp-tender.
  5. Push the vegetables to one side of the skillet and add the apricots. Cook for 2 minutes until slightly softened.
  6. Pour the soy sauce mixture over the vegetables and apricots. Stir well to coat everything evenly.
  7. Cook for an additional 2 minutes until the sauce thickens.
  8. Season with salt and pepper to taste.
  9. Remove from heat and sprinkle the crispy topping over the stir fry.
