Amazake
Amazake is a traditional sweet, non-alcoholic Japanese drink made from fermented rice. It's rich in nutrients and often consumed as a dessert or a warm drink during the winter.
Ingredients - Serves 4
- Sugar - Optional, to taste
- Water - 4 cups
- Koji rice - 1/2 cup
- Cooked white rice - 2 cups
Let's Get Started
- Combine the cooked rice, koji rice, and water in a large pot. Stir well to combine.
- Cover the pot with a lid and let it sit in a warm place for about 6 hours, or until the mixture has fermented and smells sweet.
- After the mixture has fermented, heat it over medium heat, stirring constantly, until it comes to a simmer. Do not let it boil.
- Reduce the heat to low and continue to cook, stirring frequently, for about 30 minutes, or until the amazake has thickened to your liking.
- If desired, add sugar to taste and stir until dissolved.
- Serve the amazake warm, or let it cool and then refrigerate it until chilled. It can be enjoyed as a sweet drink or a dessert.
