Ingredients - Serves 4

Let's Get Started

  1. Combine the cooked rice, koji rice, and water in a large pot. Stir well to combine.
  2. Cover the pot with a lid and let it sit in a warm place for about 6 hours, or until the mixture has fermented and smells sweet.
  3. After the mixture has fermented, heat it over medium heat, stirring constantly, until it comes to a simmer. Do not let it boil.
  4. Reduce the heat to low and continue to cook, stirring frequently, for about 30 minutes, or until the amazake has thickened to your liking.
  5. If desired, add sugar to taste and stir until dissolved.
  6. Serve the amazake warm, or let it cool and then refrigerate it until chilled. It can be enjoyed as a sweet drink or a dessert.
