Zupa Pomidorowa

Zupa Pomidorowa is a traditional Polish tomato soup made with fresh tomatoes, vegetables, and herbs.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped, for garnish
  • Sour cream - 1/2 cup, for serving
  • Salt and pepper - To taste
  • Dried oregano - 1/2 teaspoon
  • Dried basil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 4 cups
  • Garlic - 2 cloves, minced
  • Celery - 2 stalks, finely chopped
  • Carrot - 1 large, grated
  • Onion - 1 large, finely chopped
  • Tomatoes - 1 kg, peeled and chopped

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion, grated carrot, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the chopped tomatoes, vegetable broth, tomato paste, sugar, dried basil, dried oregano, salt, and pepper. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, until the tomatoes are cooked and the flavors are well blended.
  6. Using an immersion blender or a regular blender, puree the soup until smooth.
  7. Taste and adjust the seasoning if needed.
  8. Serve the zupa pomidorowa hot, garnished with a dollop of sour cream and chopped fresh parsley.
