Tomato Soup

A comforting and flavorful tomato soup made with fresh tomatoes and herbs.

Ingredients

  • Heavy cream - 1/4 cup
  • Salt and pepper - To taste
  • Dried oregano - 1/2 teaspoon
  • Dried basil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 4 cups
  • Tomatoes - 6 large, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped tomatoes, vegetable broth, tomato paste, sugar, dried basil, dried oregano, salt, and pepper. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  5. Using an immersion blender or regular blender, puree the soup until smooth.
  6. Return the soup to the pot and stir in the heavy cream. Heat for an additional 5 minutes.
  7. Taste and adjust the seasoning if needed.
  8. Serve hot and enjoy!
