Carrot and Ginger Stir Fry

This carrot and ginger stir fry is a delicious and healthy dish that combines the sweetness of carrots with the zing of ginger.

Ingredients

  • Toasted sesame seeds - 1 tablespoon
  • Green onions - 2, sliced
  • Black pepper - To taste
  • Salt - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Carrots - 4 medium, julienned

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the ginger and garlic and cook for 1 minute, until fragrant.
  3. Add the julienned carrots and stir fry for 3-4 minutes, until slightly softened.
  4. In a small bowl, whisk together the soy sauce, honey, red pepper flakes, salt, and black pepper.
  5. Pour the sauce over the carrots and stir fry for an additional 2-3 minutes, until the carrots are tender-crisp and coated in the sauce.
  6. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  7. Serve hot as a side dish or over steamed rice as a main course.
