Yum Pla Duk Foo is a crispy catfish salad with a tangy and spicy dressing.

Ingredients

  • Salt - To taste
  • Thai chili peppers - 2, thinly sliced
  • Sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Lime juice - 3 tablespoons
  • Roasted peanuts - 1/4 cup, crushed
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/2 cup, chopped
  • Red onion - 1, thinly sliced
  • Green mango - 1, shredded
  • Vegetable oil - 2 cups
  • Catfish fillets - 2 fillets

Instructions

  1. Heat the vegetable oil in a deep pan or wok over medium-high heat.
  2. Add the catfish fillets and fry until crispy and golden brown. Remove from the oil and drain on paper towels.
  3. In a mixing bowl, combine the shredded green mango, red onion, cilantro, mint leaves, and crushed peanuts.
  4. In a small bowl, whisk together the lime juice, fish sauce, sugar, Thai chili peppers, and salt.
  5. Break the crispy catfish fillets into bite-sized pieces and add them to the mixing bowl with the mango mixture.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve the Yum Pla Duk Foo immediately as an appetizer or as a side dish to accompany your main course.
