Wild Rice Soup

This creamy and hearty wild rice soup is packed with vegetables and tender wild rice.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Milk - 2 cups
  • All - purpose flour - 1/4 cup
  • Butter - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1, diced
  • Celery - 2 stalks, diced
  • Carrots - 2, diced
  • Chicken broth - 4 cups
  • Wild rice - 1 cup

Instructions

  1. Cook the wild rice according to package instructions. Drain and set aside.
  2. In a large pot, melt the butter over medium heat.
  3. Add the carrots, celery, onion, and garlic. Cook until the vegetables are tender, about 5 minutes.
  4. Stir in the flour and cook for 1 minute.
  5. Gradually whisk in the chicken broth and milk.
  6. Add the cooked wild rice and dried thyme. Season with salt and pepper.
  7. Bring the soup to a simmer and cook for 20 minutes, or until the flavors are well combined.
  8. Serve hot, garnished with fresh parsley.
